Stupid Easy 3 Ingredient Grilled Chicken Breast Brine
This super simple brine will not only add moisture but flavor to those chicken breasts.

- 1/2 ounces kosher salt per pound of chicken breast approximately 1 tablespoon = 1/2 ounces
- 1/2 ounces brown sugar per pound of chicken breast approximately 1 tablespoon = 1/2 ounces
- 2 whole peppercorns per pound of chicken breast doesn't have to be exact
- 1 cup water per pound of chicken breast
- 1 cup ice per pound of water
- additional water as needed to cover the breasts at the end
Calculate the amount of ingredients neededExample:2 pounds of chicken breasts would require1 ounce (2 tablespoons) of kosher salt + 1 ounce (2 tablespoons) of brown sugar + 4 black peppercorns + 2 cups of water + 2 cups ice Combine the water, salt, sugar and peppercorns in a pot and bring to a boil. Make sure all the sugar and salt have been dissolved. Let cool for about 15 minutes.
Afterwards, combine the brine solution and ice in a non-reactive pan or food grade plastic container. Then add the chicken breasts making sure all are submerged. Add more water as needed.
Cover and place in the fridge for about 4 hours. Afterwards you can remove and pat dry before cooking. If you do want to apply additional seasoning use something that does not contain salt as the breasts will already have plenty of salt.
