Grilled Peach Paloma

A light refreshing drink to use up all those delicious peaches

Ingredients

  • 2 whole peaches cut up into wedges
  • 1 whole lime cut up into wedges
  • 4 tablespoons agave nectar
  • 12 ounces tequila 2 ounces per drink
  • 12 ounces sparkling water 2 ounces per drink
  • ice

Instructions

  • Set up your grill for direct high heat
  • Place the peach wedges on the grill directly over the heat and grill for a few minutes on each side. We are looking for some caramelization and the peaches to be softened. Remove from grill and let cool for a few minutes.
  • Afterwards, place the grilled peaches, lime wedges and agave syrup in a cup and muddle. It should only take about a minutes and the peaches should turn into a puree.
  • Strain the mixture making sure to push out as much of the liquid as possible The puree will be thick so you may need to scrap the inside of the strainer to get it all to pass through. At this point you can batch the cocktail or have enough for 6 individual drinks.
  • To make a batch, combine all the peach liquid with 12 ounces of tequila and mix with ice. Pour into a glass and top off with sparkling water.
  • To make an individual drink, combine about 2 ounces of the peach liquid with 2 ounces of tequila and ice in a shaker cup and shake. Pour into a glass and top off with sparkling water.
