Buffalo Chicken Patty Melt

- 1 pound ground chicken split into three equal sized balls
- 1/2 onion sliced
- your favorite buffalo sauce
- blue cheese crumbles
- salt and pepper
- 6 slices your favorite sliced bread, toasted rye is traditional for a patty melt
- neutral oil
Preheat your griddle over medium high heat.
Put down some oil along with the onions and a pinch of salt. Cook for 2 - 3 minutes or until softened.
Separate the onions into three piles and place down the balls of ground chicken directly on top. Cook for about 1 minute.
Using your spatula, flatten the ground chicken onto the onions and add salt. Cook for 2-3 minutes or until mostly cooked through.
Flip the patties and add the buffalo sauce plus the the blue cheese crumbles. Cook for 1-2 minutes or until cooked all the through.
Serve on toasted bread and enjoy!
