Buffalo Chicken Patty Melt
Who doesn’t love Buffalo wings. I mean, my mouth is watering just typing out that sentence. Crispy, spicy, saucy and with the blue cheese (or ranch) to provide a great counterbalance. Now take all those ingredients and put them in a sandwich. That’s what this Buffalo chicken patty melt is!
This is another super easy recipe for your griddle. Of course you can cook this in a pan too! You can gather all the ingredients while you are getting it preheated. And then it cooks super quickly too!
Buffalo Chicken Patty Melt Cooking Tips
Even though this is a simple recipe there are a few things to look out for!
- Quality Ingredients – The fewer ingredients that a recipe calls for, the more they matter. So if you put your patty melt on stale bread don’t blame me that it doesn’t taste good!
- Don’t overcook the ground chicken – Ground chicken only has about 5% fat! Ground chuck which is typically used for burgers is about 20% fat. Ground chicken is super lean and will dry out very quickly.
- Use mayo or butter to toast the bread – A little bit of fat will really help toast the bread nicely. If using mayo, a little bit goes a long way!
- Don’t like blue cheese? – I get it, blue cheese isn’t for everyone. Top the sandwich with mozzarella or whatever cheese you like!
- Ranch on the side – Just like wings, you can dunk this patty melt in some ranch right before taking a bite!

Buffalo Chicken Patty Melt
Everything you love about wings but in sandwich form.

Cost: 10
Ingredients
- 1 pound ground chicken split into three equal sized balls
- 1/2 onion sliced
- your favorite buffalo sauce
- blue cheese crumbles
- salt and pepper
- 6 slices your favorite sliced bread, toasted rye is traditional for a patty melt
- neutral oil
Instructions
- Preheat your griddle over medium high heat.
- Put down some oil along with the onions and a pinch of salt. Cook for 2 – 3 minutes or until softened.
- Separate the onions into three piles and place down the balls of ground chicken directly on top. Cook for about 1 minute.
- Using your spatula, flatten the ground chicken onto the onions and add salt. Cook for 2-3 minutes or until mostly cooked through.
- Flip the patties and add the buffalo sauce plus the the blue cheese crumbles. Cook for 1-2 minutes or until cooked all the through.
- Serve on toasted bread and enjoy!
