Greek seasoning is a robust mix of herbs and spices traditionally used in Mediterranean cooking. The backbone of the blend typically includes oregano, thyme, and rosemary, offering an aromatic, herbaceous base. To make life simple and less expensive, use a generic Italian seasoning blend. It contains all those ingredients already and add garlic and onion powder to bring a savory depth. Finally add some lemon zest that cuts through rich meats along with paprika, brown sugar and black pepper to bring it all together.

The result is a seasoning that’s both herbaceous and bold, perfect for enhancing grilled meats, seafood, vegetables, and even flatbreads.

Pro Tips: Greek Seasoning

Here are some tips to get the most of your efforts.

  • Salt first – as like all of my rub recipes, there is no salt in the rub. Salting the meat should be done first and use 1 teaspoon of kosher salt per pound of meat.
  • Marinate or Dry Brine – Combine salt, the Greek seasoning, olive oil and lemon juice to make a great marinade. Or just salt and seasoning to dry brine.
  • Don’t Burn It – The brown sugar in the rub is not traditional but it helps wonderfully with caramelization. Just make sure to not burn it!
  • Apply it to everything – This rub is great on beef, chicken, pork, fish or vegetables. I would definitely use it in this Grilled Salmon Gyro with Homemade Tzatziki recipe as well.

Ingredients

  • 2 tablespoons Italian seasoning see notes
  • 1 tablespoons garlic powder
  • 1 tablespoon brown sugar
  • 1 tablespoon dreid lemon peel
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon paprika
  • 1/2 tablespoon black pepper

Instructions

  • Combine all ingredients and mix to combine. Store airtight for up to a month.

Notes

Can substitute the Italian seasoning with a combination of oregano, basil and parsley but I find the Italian seasoning to be much for convenient.  
 
Also note, there is no salt in the rub.  Apply salt first at a rate of 1 teaspoon of kosher salt per pound of meat.
