Grilled Sugar Snap Peas with Chili Crunch Aioli
These grilled sugar snap peas might be your new favorite summer appetizer. Or side dish! First reason being that they taste great. Sugar snap peas are delicious raw but applying some heat adds another layer of flavor from the caramelization and intensifies their sweetness. The second reason being that it’s easy with minimal prep and just a handful number of ingredients.
Of course you could just eat the sugar snap peas by themselves but the chili crunch aioli really puts this recipe over the top. Honestly, my mouth is watering just thinking about making these again. The creamy, garlicy, spiciness is the perfect complement for the grilled vegetables.
Equipment Needed
- Grill Basket – There’s just no way to grill vegetables (or shrimp) without a basket. Unless you want to skewer everything but that is so time consuming.
- Chili Crisp – Not really equipment but very vital to the full recipe. You could make your own but the one I linked is very good.
- Charcoal – This recipe is just as good on a gas grill (or even and griddle) but cooking over live fire is my favorite method. I’ve linked my absolute favorite charcoal of all time.
Grilled Sugar Snap Peas Cooking Tips
This recipe is on the easy side but here are a few helpful tips to get the most out of this recipe.
- High Heat – You really need high heat to caramelize the sugar snap peas. They have a high amount of water so lower heat will only steam them. Crank up that temperature!
- Caramelize, Don’t Burn – You will want to stir the sugar snap peas everyone 1 – 2 minutes while grilling. Just enough time to develop the caramelization but not too long to let them burn.
- Oil & Salt – Don’t forget the oil and salt before grilling. This will help the flavor and texture of the final product!

Grilled Sugar Snap Peas with Chili Crunch Aioli
Ingredients
For the grilled sugar snap peas
- 1 pound sugar snap peas
- 1 – 2 tablespoons oil canola, vegetable, avocado, etc
- kosher salt
- 1 – 2 tablespoons soy sauce
- ½ lime juiced
- sesame seeds optional for garnish
For the chili crunch aioli
- ½ cup mayonnaise
- 1 – 3 tablespoons chili crunch to taste
- ½ lime juiced
Instructions
For the grilled sugar snap peas
- Set up grill for direct high heat with a grill basket.
- Place sugar snap peas in a bowl and coat with a couple tablespoons of oil and a generous pinch of kosher salt. Toss to combine.
- Place the sugar snap peas in the grilled basket over high direct heat. Move with a pair of tongs every 1 – 2 minutes to avoid burning. Grill for 5 to 7 minutes or until well charred.
- Remove from grill and back into a bowl. Add the soy sauce, lime juice and sesame seeds and toss to combine.
For the chili crunch aioli
- Combine the mayonnaise, chili crunch and lime juice. Mix to combine. Serve immediately with the warm sugar snap peas.
